QUINOA SALAD – serves 2

Ingedients:

2 cups cooked quinoa

2 cooked chicken breasts, chopped

1 avocado, sliced

10 cherry tomatoes, halved

4 radishes, finely sliced

½ cucumber sliced

1 red sweet pepper sliced in legth

Handful rocket leaves

Salad dressing ingredients:

3 tablespoons apple cider

1 tablespoon Dijon mustard

1/3 cup olive oil

Salt and black pepper to taste

Mix all dressing ingredients together and sprinkle over salad
