Cabbage Pie

Ingredients:

½ Cabbage very finely chopped

1 Onion sliced

Salt and Pepper to taste

4 Eggs (whisked)

5 TBL gluten free flour

1/2 cup grated firm Goats cheese of your choice ie. Goats feta or cheddar etc

Method:

Add the gluten free flour, salt and pepper to the eggs and whisk well.

Add the onion, cheese and eggs mixture to the cabbage and mix well.

Spray a frying pan with spray and cook and add cabbage mixture.

Cover with a tight lid and fry for approx. 20 minutes over low heat.

Turn the pie out onto a wooden chopping board and then place back in the frying pan so that the other side can brown.

Fry for a further 10 minutes on low heat.

Remove from heat and enjoy.
