INGREDIENTS:
FOR THE CRUST
- 2 cups almond flour
- 1 cup tapioca flour
- 1/4 cup coconut oil
- 2 eggs
- 2 tbs honey
- Pinch of salt
FOR THE FRUIT MINCE
- 325 g mixed dried fruit i.e. we used sultanas, raisins, cranberries and currants)
- 2 green apples diced
- 3 cloves
- 1 1/2 cups orange juice and zest of 1 orange
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1/2 tsp nutmeg
- 1/2 tsp ground ginger
METHOD – fruit mince
Combine all ingredients in a saucepan over a low heat.
Cover and let simmer for 30 minutes. Make sure you stir every now and again. The liquid should be absorbed and fruit dark and puffy. Yum!
Set aside to cool.
Now, to make the pastry!
Preheat oven to 180°C and spray a regular muffin tray well with spray and cook (this made deeper fruit mince pies).
METHOD – CRUST
Whisk the eggs, coconut oil and honey together.
Sift the tapioca and almond flour with salt together and add into the egg mixture.
Knead lightly to make your crust / pastry.
Roll out your pastry and cut into 8 big circles (reserving some pastry which you have cut into little stars for the tops of your mince pies)
Place the pastry circles in the muffin tray pressing them down lightly and up the sides to may your pastry cups.
Spoon the cooled down fruit mince mixture into the pastry cups.
Cover the tops with the star shapes and bake until lightly golden.
