Summer Chicken and Green Bean Salad

Serves 2-3 as a main course


2 boneless, skinless chicken breasts, grilled and sliced into chunky pieces

1 small packet of green beans, blanched

2 handfuls of rocket

1 ripe avocado, peeled and diced

Half a medium red onion finely sliced

2 handfuls cherry tomatoes, halved

1 block of Goats Milk Feta, cubed (optional)

Salad dressing made from olive oil, apple cider and salt


Toss everything together in a large bowl to combine. 

Mix Salad dressing together and toss with just enough dressing to coat your salad.

Add Feta cubes (if using).
